Warm Jersey Royal Potato Salad

Taken from a Waitrose Quick and Easy recipe card, this is a wonderful summer salad that is full of flavour and wonderful ingredients such as lardons, asparagus and of course, Jersey Royals. It's quite healthy, but doesn't leave you wishing you had eaten a burger with it. It's perfect for lunch, but if you aren't feeling up to preparing an extravagant dinner it will most certainly do as a treat for two!

Ingredients

  • 200g smoked lardons
  • 1 tbsp olive oil
  • 500g Jersey Royal potatoes, scrubbed
  • 100g asparagus tips, washed and halved
  • 190g cooked chicken skinless breast fillets
  • 120g baby spinach
  • 4 tbsps mustard and honey dressing

Method

  • Heat a frying pan or sauté pan, add the lardons and cook for 3-4 minutes until crispy. There is no need to use any oil as the lardons will provide enough fat of their own. Remove the lardons with a slotted spoon and drain on kitchen paper.
  • Wipe out the pan with a sheet of kitchen towel, then heat the olive oil in the pan and add the potatoes, tossing to coat with the oil. Cook the potatoes, covered, for 30 minutes or until tender. Shake the pan occasionally during the 30 minutes to turn the potatoes.
  • Meanwhile, cook the asparagus tips in boiling water for 4 minutes until just tender. Drain and refresh in cold water. Then cut the chicken into thin slices.
  • Place the rinsed and drained spinach into a large salad bowl, add the lardons, asparagus, chicken and the hot potatoes. Add the dressing and gently mix to coat all the ingredients. Serve immediately.

Bilby Boost

  • You can of course cook diced chicken breast fillets yourself and use these if you don't wish to buy ready cooked chicken - in the past I have done this myself so that I can use free range chicken and pan fried them in garlic butter to give them an extra dimension.
  • Again, you can make your own dressing if you prefer to, but my favourite cheat is to use Briannas Honey & Mustard dressing which you can find in most supermarkets. It's delicious. Other honey & mustard dressings I have bought have been rather weedy.
