Pumpkin Filo Pie

The origins of this recipe are completely unknown to me now. Like most cooks I have recipes dotted all over the house, written in notebooks, shoved into folders and loose in drawers. I remember this to be a fantastic recipe with lots of my favourite flavours - cumin, goats cheese, sage and walnuts with a kick of chilli. To top it off it's very easy so makes a great mid-week meal that tastes special enough to feel like a treat.


  • 800g pumpkin, peeled & cut into 1cm cubes
  • 1/2 tsp chilli flakes
  • 2 tsp cumin seeds
  • 3 tbsp olive oil
  • 200g soft goats cheese
  • 2 tsp fresh sage, chopped
  • a handful of walnut pieces
  • a handful of chopped flatleaf parsley
  • 150g filo pastry
  • 3 tbsp olive oil


  • Dice the pumpkin into 1cm cubes and place in a roasting dish with the chilli and cumin. Drizzle with olive oil and roast for 25-30 minutes. Allow to cool.
  • Stir the cooled pumpkin, goats cheese, sage, walnuts and parsely together and place in a pie dish.
  • Brush each of the filo pastry sheets with olive oil and simply pile in waves on top of the pumpkin mixture making sure it is completely covered. Bake for 20 minutes.
