Cranachan with Raspberries

Cranachan is a traditional Scottish dessert, which I discovered for myself back in 2002. Obviously millions of Scots will be chuckling at my late introduction, but in case you haven't come across it yourself as yet, it's simple, special and definitely worth having a go at. I have made this whilst on holiday in a castle outside of Campbelltown for a party of about 15 as well as for a large wedding party and both times it went down a treat. It's an easy one for large groups. This recipe serves a more likely 4 people.


  • 250ml fresh double cream
  • 1 tbsp thick heather honey
  • 1 generous tbsp of good whisky
  • 1 heaped tbsp of toasted oatmeal
  • 2 punnets of raspberries


  • Whisk the cream together with the honey and whisky. Fold in the toasted oatmeal. Pile on top of fresh raspberries and serve.
  • That's it!!

Bilby Boost

  • I decided that I would try using Drambuie instead of regular whisky on one occasion and this was incredible. It's the only thing I use now, but of course you may not want to outlay for such an extravagance on a regular shop so a miniature bottle would do you fine.
